Sticky Toffee Apple Brownie
You will need:
Jane Asher Nestle Creations Rolo Chocolate Brownie Mix
1 Bramley Apple
1 Lemon
55g soft toffee
25ml (5 teaspoons) milk
1 medium egg
75ml (5 tablespoons) water
30ml (2 tablespoons) oil
Baking rectangular tin 27x17x4cm (11” x 7”)
or square tin 22x22x4cm (9”x9”)
Foil or baking paper
METHOD:
Please note that cooking appliances may vary. These instructions are given only as a guide.
Preheat oven to 190ºC (170ºC fan assisted ovens) / 375ºF/ Gas Mark 5.
- Empty the brownie mix into a large mixing bowl and add 1 medium egg, 75ml water and 30ml oil.
- Stir well with a wooden spoon until everything is mixed together- but don’t worry if it still looks a bit lumpy.
- Add the sachet of Rolos to the mix and stir well.
- Empty mixture into the baking tin and level the surface.
- Meanwhile peel the apple. Slice the apple into quarters and remove the core. Slice the apple thinly into half moon shapes.
- Immediately arrange the apple slices on the top of the mixture, carefully overlapping the slices to cover the whole tin. Note- if the apple slices are left exposed to the air they will go brown. This is nothing to worry about but may spoil the appearance of the finished brownie.
- Bake in the centre of the oven for approximately 40 to 45 minutes until firm to the touch. 10 minutes before the end of cooking, brush apple slices with the juice of a lemon to prevent them going too brown. Note- it needs slightly longer cooking time than the standard brownie mix because the apple adds extra moisture and therefore the brownie will take longer to cook.
- Remove from the oven and allow the brownie to cool completely in the tin.
Method for the Toffee Sauce:
- Place toffees and milk in a pan and heat very gently, stirring continuously until dissolved. At least 5 minutes.
- Drizzle over cooled brownie immediately.
- Leave to cool and cut brownie into slices and serve.
You may need to use a fish slice as it will still be fudgy on the bottom.
The brownie can be eaten as a cake or warmed in the microwave for 10 to 20 seconds and served with ice cream for a delicious dessert. |
