A fun idea to try at Christmas using the Jane Asher Home Baking Selection Christmas Pudding Mix:

Preheat oven to 220ºC (200ºC for fan assisted ovens)/425ºC/Gas Mark 7.

Grease and line the 7inch cake tin.

Beat together one egg with 100ml (4fl oz) of milk.

Add the contents of the Christmas pudding muffin sachet and stir with a wooden spoon until a lumpy batter is formed.

Fold in the mincemeat.

Pour the mixture in the greased and lined cake tin.

Bake in the centre of the oven for approximately 15-20 minutes until firm to touch.

Remove the sponge from the oven and the cake tin and allow to cool completely.

Cut the sponge into a Christmas tree shape and use the left over cut out parts as ‘presents’.

Use the sugar sachet to make icing by slowly adding drops of water until a paste is formed, then drizzle over the cake.

Alternatively you can use other decorations (e.g. coloured icing, dried/glace fruit) to decorate if you like.
