Triple Chocolate Fudge Cakes


Ingredients:Jane Asher's Fudge Cakes
Jane Asher Everyday Sponge Mix
60g Cocoa Powder
50g Dark Chocolate Chips
80g Icing Sugar
80g Softened butter
1 egg
85ml Semi-skimmed Milk
Grated Chocolate – White, Dark & Milk

6 Muffin Cases
Muffin Tin

 

METHOD

Please note that cooking appliances may vary. These instructions are given only as a guide.

  1. Pre-heat oven to on pack instructions.

  2. Empty the sponge mix into a bowl and add 20g of the cocoa powder.

  3. Add 1 egg and 85ml semi-skimmed milk.

  4. Using an electric whisk, mix for 3 minutes on high speed.

  5. Place the muffin case into the muffin tin and fill the cases equally with the mixture.

  6. Bake for 15-18 minutes until springy to the touch, allow to go cold before topping.

  7. For the topping: mix together the icing sugar, coco powder and softened butter until light and creamy.

  8. Melt the chocolate chips over a pan of simmering water and gently fold into the chocolate buttercream.

  9. Pipe onto the cupcakes in a swirl pattern then top with your trio of grated chocolate.
