A Past Recipe of the Month

Zesty Tropical Coconut Cupcake!
You will need:
Jane Asher Coconut Cake Mix
150g butter/margarine
150ml (5 Fl oz) Milk
2 Medium Eggs
1 Lemon
1 Lime
Muffin Tray
12 Muffin Cases
Electric Whisk
Wooden Spoon
Sharp Knife
Large Mixing Bowl
Cooling Rack
Piping Bag Optional
METHOD:
Please note that cooking appliances may vary. These instructions are given only as a guide.
- Pre-heat oven to 190°C (170°C for a fan oven) /375°F/Gas Mark 5.
- Place the muffin cases into a muffin tray.
- Grate the lemon and cut in half. Juice the lemon. Keep half of the lemon juice for the buttercream.
- Beat 60g (2 ½ oz) of butter/margarine in a large mixing bowl to soften.
- Add a third of the contents of the Coconut Cake sachet gradually, beating it to achieve a fine crumb.
- Beat in 2 medium eggs, one at a time.
- Whisk in 150ml milk, lemon zest, half the juice of the lemon and the remainder of the Coconut Cake sachet contents with an electric whisk for 2 minutes.
- Reserve 50g of the Desiccated Coconut for decoration and fold the remainder into the cake mixture.
- Divide the mixture evenly between the 12 muffin cases.
- Bake for 25-30 minutes until lightly browned and spring back when lightly touched.
- When cooled transfer to a cooling rack to cool completely.
- Meanwhile cream 90g of butter/margarine until light and fluffy while gradually adding the contents of both icing sachets. Mix until a spreadable consistency is achieved. Add the juice of half the lemon. Mix well.
- Empty the buttercream into the piping bag and snip the corner. Pipe the buttercream evenly between the cupcakes.
- Alternatively spread the buttercream over the cakes with a knife or spoon.
- Sprinkle over the remaining coconut. Carefully peel the lime and cut into small strips using a sharp knife. Top the cupcakes with the peel.
