Lemon and Orange Marmalade Loaf  

You will need:

Jane Asher Lemon Drizzle Cake mix
(Home Baking Collection)

100g Marmalade
2 medium eggs
45ml oil
30ml water
1 litre loaf tin


METHOD:

Please note that cooking appliances may vary. These instructions are given only as a guide.

  1. Preheat oven to 180ºC (160ºC for fan assisted)
  2. Blend together the contents of lemon cake sachet, 2 medium eggs, both lemon juice sachets, 45ml oil and 30ml water.
  3. Whisk on slow speed for 30 seconds then continue on maximum speed for 2 minutes: to form a thick batter.
  4. Add approx 100g orange marmalade (ideally with thin cut peel).
  5. Pour the mixture into a greased and lined 1 litre loaf tin.
  6. Place in the centre of the oven and bake for approximately 40 minutes until deep brown.
  7. Remove from oven and leave to cool in tin.
Optional drizzle: blend icing sachet with small amount of water to give smooth flowing texture and drizzle over surface of loaf.
