METHOD:

- Preheat oven to 180ºC (160ºC for fan assisted)
- Blend together the contents of lemon cake sachet, 2 medium eggs, both lemon juice sachets, 45ml oil and 30ml water.
- Whisk on slow speed for 30 seconds then continue on maximum speed for 2 minutes: to form a thick batter.
- Add approx 100g orange marmalade (ideally with thin cut peel).
- Pour the mixture into a greased and lined 1 litre loaf tin.
- Place in the centre of the oven and bake for approximately 40 minutes until deep brown.
- Remove from oven and leave to cool in tin.
Optional drizzle: blend icing sachet with small amount of water to give smooth flowing texture and drizzle over surface of loaf.
