Chocolate Cranberry Muffins  


Why not give your cakes a fruity twist and add some colourful fruit? Cranberries are rich in antioxidants, making them a healthy addition to your delicious treat whilst boosting the rich flavour!

You will need:


1 Jane Asher Great to Bake Triple Chocolate Muffin Mix
120ml milk
1 egg
75g sweetened dried cranberries
Icing sugar for dusting

 



METHOD:

Please note that cooking appliances may vary. These instructions are given only as a guide.

Preheat oven to 220 °C (200°C for fan assisted ovens)/450°F/Gas Mark 7.

  1. Empty into a large mixing bowl:
    the chocolate muffin mix
    1 medium egg
    120ml (4 fl.) milk
    sachet of the dark chocolate chips
    the cranberries (approx 45g)
  2. Mix briefly with a spoon to form a lumpy batter
  3. Separate the muffin cases out onto a muffin pan or baking tray.
  4. Divide the muffin evenly between the cases. Sprinkle the remaining chocolate chips and cranberries over the top of the muffins.
  5. Bake on the middle shelf of the oven for 15-18 minutes.
  6. Remove from the oven and allow to cool.
  7. To finish dust with icing sugar
