Devil's Chocolate Fudge Fairy Cakes

This is basically a Jane Asher Chocolate fudge cake mix but instead of producing one large cake it produces 12 large fairy cakes. This makes it ideal for lunch boxes, picnics, calorie control and sharing - if you want to!

 

You will need:
1 box of Jane Asher Chocolate Fudge cake mix
12 muffin cases plus a muffin tray
2 medium eggs
50 ml vegetable oil
Electric Mixer / whisk
1 bar of milk or dark chocolate (size depends on how much you love chocolate ! )

 

Makes 12

 

METHOD:

Please note that cooking appliances may vary. These instructions are given only as a guide.

Preheat oven to 180 ºC (160ºC fan assisted ovens) / 350 ºF/ Gas Mark 4.

  1. Prepare the chocolate cake as described on the box but divide the mixture evenly between 12 muffin cases.
  2. Bake in the centre of the oven for approximately 17 mins.
  3. Leave to completely cool on a wire rack.
  4. Prepare the chocolate frosting as directed on the box and generously apply to the top of each cake.
  5. Chop the chocolate bar into small pieces with a knife and sprinkle over each cake.
  6. If you want chocolate curls for the top, melt the chocolate in a bowl over boiling water. once melted, spread over some grease-proof paper, leave it to cool completely in the fridge and then tear it off the greaseproof.

The chocolate filling packet found in this mix is surplus for this recipe but you could keep it for other cakes recipes.
Marshmallows or other toppings could replace or be addition to the chocolate curls if you want a different topping.
