Strawberry and White Chocolate Summer Muffins
You will need:
Jane Asher Creations Milkybar Baking Mix
25g butter/margarine
75ml (5 tablespoons) Oil
3 or 4 Fresh Strawberries
1 Medium Egg
Muffin Tray
3 Large Muffin Cases
Electric Whisk
Wooden Spoon
Sharp knife
Large Mixing Bowl
Cooling Rack
METHOD:
Please note that cooking appliances may vary. These instructions are given only as a guide.
- Pre-heat oven to 220°C (200°C for a fan oven) /425°F/Gas Mark 7.
- Place the muffin cases into a muffin tray.
- Empty the muffin mix into a large mixing bowl and add 75ml (5 tablespoons) oil and 1 medium egg.
- Stir or whisk vigorously for 2 minutes until the mix is smooth and creamy.
- Divide the mixture equally between 3 large muffin cases.
- Bake for 16 to 18 minutes until lightly browned and spring back when lightly touched.
- Leave to cool and transfer to a wire rack to cool completely.
- Meanwhile with a wooden spoon cream 25g butter until light and fluffy.
- Gradually beat in the topping mix to make a light butter icing.
- Spread the topping over the muffins.
- Wash and slice the strawberries to whichever size you wish and place on top of the muffin.
- Cut the Milkybar Buttons is quarters and sprinkle over the muffins..
