Raspberry and White Chocolate Muffins
You will need:
1 Jane Asher Great to Bake Raspberry Muffin Mix
1 medium egg
100ml (7 tablespoons) milk
120g White Chocolate
30g Dark Chocolate Chips
20g Icing Sugar
Muffin tray
Method:
Please note that cooking appliances may vary. These instructions are given only as a guide.
Preheat oven to 220ºC (200ºC fan assisted ovens) / Gas Mark 7.

Empty into a large mixing bowl:
the raspberry muffin mix
1 medium egg
100ml (7 tablespoons) milk

Mix briefly with a spoon to make a lumpy batter (don’t over-mix it).

Stir in all the raspberry pieces.

Put the muffin cases into a muffin tray and divide the mixture evenly between the cases.

Place on the middle shelf of a pre-heated oven for 15 to 20 minutes or until the muffins are golden.

Remove from the oven and cool completely on a cooling rack.

For the icing melt the chocolate over a pan of boiling water.

Add 20g icing sugar and stir well.

Decorate the muffins with the white chocolate and dark chocolate chips.
