Carrot Cake and Cream Cheese Squares

Use a Jane Asher Carrot and Orange Cake Mix to make this yummy any time treat.

YOU WILL NEED

1 pack Jane Asher Carrot and Orange Cake Mix
2 medium eggs
180ml (6 fl. oz. water)
50ml (2 fl. oz) oil
50g (2 oz) pecans or walnuts, roughly chopped
50g (2 oz) raisins or sultanas
Rind and juice of 2 small oranges
200g pack cream cheese

METHOD

Please note that cooking appliances vary. These instructions are given as a guide.

  1. Pre-heat oven to 180ºC/350ºF/Gas Mark 4
  2. Make the cake up as directed on the pack.
  3. Stir in the walnuts/pecans, sultanas/raisins and the juice and rind from the oranges (reserve a small amount of the rind for decoration).
  4. Transfer the mixture into a greased and base lined 25 x 18 cm (11” X 8”) cake tin.
  5. Bake in the pre-heated oven for approximately 30 minutes
    Or until a skewer inserted into the centre of the cake comes out clean.
  6. Allow the cake to cool then carefully remove from the tin
    and remove the lining paper.
  7. Beat the cream cheese with the contents of the orange
    filling sachet until smooth.
  8. Spread the frosting evenly over the cooled cake, then
    sprinkle over the reserved orange rind. Cut into 9-12
    portions .
