Recipe of the Month for April 2005


LEMON ZINGER CAKES

YOU WILL NEED
1 Pack Jane Asher Lemon Tray Bake
Paper cases (fairy cake size)
50g softened butter
1 medium egg

Cooking appliances vary – use these instructions as a guide only

Pre heat oven as follows:
180ºC/350ºF/Gas Mark 4

TO MAKE THE CAKES

Place the cake mix into a mixing bowl. Add 1 medium egg, 1 tablespoon water, 50g (2 oz) softened butter, and the contents of one of the lemon juice sticks (included in the Jane Asher Lemon Tray Bake pack).

Mix with an electric whisk for about 1.5 minutes on high speed until smooth and creamy.

Divide the mixture evenly between the paper cases placed on a baking or muffin tray.

Bake in the centre of the pre-heated oven for approximately 25-30 minutes until pale golden and spongy to the touch.

Remove from the oven and allow to cool.

Meanwhile make up the zingy icing: Place the topping mix into a small bowl. Add the contents of the remaining lemon juice stick and mix to form a smooth paste.

When the cakes are cold, divide the zingy icing equally between the cakes allowing the icing to drizzle down the sides of the cake.
