Chocolate & Blueberry Cake  

You will need:

Cake:
1 pack of Jane Asher Chocolate Fudge Cake
2 medium eggs
180ml of water
50ml oil

Chocolate Filling:
40g butter
Filling sachet (from Jane Asher carton)

Cream Cheese Filling :
100g full fat cream cheese
200g icing sugar
10ml warm water
40g butter

Bueberries:
Handful fresh blueberries (approx 100g)
Teaspoon granulated sugar
Few drops melted butter

 


Luxurious chocolate cake with chocolate and cream cheese icing-topped with frosted blueberries and chocolate shavings

METHOD:

Please note that cooking appliances may vary. These instructions are given only as a guide.

Preheat oven to 180°C (160°C for fan assisted ovens) /350°F/ Gas Mark 4.

Cake:

  1. Blend together the contents of the chocolate cake sachet with 2 medium eggs, 180ml water and 50ml oil in a large mixing bowl. Whisk on slow speed for 30 seconds then continue on maximum speed for 2 minutes.
  2. Divide the mixture equally into two greased and lined 18cm (7”) sandwich tins.
  3. Bake in the centre of the oven for 25-30 minutes.
  4. Remove the cakes from the oven and allow cooling completely.

Chocolate Filling:

  1. Cream 40g butter until light and fluffy while gradually adding the contents of the chocolate filling sachet.  Mix until a spreadable consistency is achieved.
  2. Spread over one of the cooled cakes.

Cream Cheese Filling:

  1. Cream 40g butter until light and fluffy. Stir in the cream cheese and 10ml water.
  2. Gradually add sifted icing sugar until a spreadable consistency is achieved.
  3. Spread half of cream cheese icing over the chocolate filling and sandwich the cakes together.
  4. Spread another layer of the cream cheese icing over the top of the cake.

Blueberries:

  1. Roll the washed and dried blueberries in the melted butter (use as little butter as possible-the surface needs to be tacky but not greasy).
  2. Sprinkle the blueberries with caster sugar and place on top of the cake.

Chocolate Shavings :

  1. Melt the chocolate (from the Jane Asher carton) by immersing in very hot water. Spread over the base of a small plate and leave until just set.
  2. Use a sharp knife at 45degree angle to create small chocolate shavings, sprinkle these over the blueberries.
