Matchmaker Wigwam Cake
with a minty twist!
You will need:
Jane Asher Smarties Party Cake Mix
1 medium egg
100ml water
80g softened (or spreadable) butter
12 drops peppermint extract
18cm (7”) sandwich tin (at least 35mm high)
1 Pack of Matchmaker Mint sticks
Electric whisk
METHOD:
Please note that cooking appliances may vary. These instructions are given only as a guide.
- Preheat oven to 200 ºC (180ºC fan assisted ovens) / 400 ºF/ Gas Mark 6.
- With a little butter or oil grease an 18cm (7”) sandwich tin
- Empty the cake mix into a large mixing bowl and add 1 medium egg and 50ml of water. Add the 12 drops of peppermint extract.
- Using an electric whisk mix for 1 minute on high.
- Add another 50ml water and whisk for a further minute on high.
- Pour the mixture into the tin and bake in the centre of the oven for 30-35 minutes until well risen and a knife inserted in the centre comes out clean.
- Allow the cake to cool in the tin for 10 minutes before turning out onto a rack to cool completely
Decorating:
- Cream 80g of butter until light and fluffy while gradually adding the contents of the chocolate frosting sachet. Mix vigorously until you have a smooth, spreadable frosting.
- Spread the frosting evenly over the top and side of the cake.
- Use the Match Maker Chocolate Sticks to line around the side of the cake, meeting at the top like a wigwam effect, and dividing the cake into portions. Use the white chocolate stars and small broken pieces of Matchmakers to decorate. If you want to try an alternative flavour, try using orange flavouring and orange flavoured Matchmakers for a twist on flavours!
